I don't watch a whole lot of anime, but i do enjoy most of the historical/samurai themed and the more mature series. I watched Moribito: Guardian of the Sacred Spirit last week, thought it was great. =)

Some others i've liked would be Rurouni Kenshin, Samurai Champloo, Basilisk, Black Lagoon, Ergo Proxy & Gungrave.
